Pesto Pasta Salad with “Steve's Gourmet Olives”

Cool refreshing salad, great for summer picnics or porch parties. I typically use a jar of Greek “Steve’s Gourmet Olives” for this salad since they do not have pits inside. Either mild or spicy, according to my mood. Throw leftover chicken or pork on top for filling dinner salad. Salad even better on Day 2 or 3.

1 cup pasta- cook according to package
½ cup wild rice or quinoa – cook according to package
2 1/2 cup tri-color peppers- bite sized pieces 
1 medium onion – diced
8-10 quartered artichoke hearts
4-6 oz “Steve’s Gourmet Olives”- Greek or Italian, spicy or mild, with juice
10-12 halved pepperoncini peppers
6-8oz feta cheese – crumbled
3-4 T pesto
1/3 cup – olive oil
1-2 T Italian seasoning

Cook and rinse pasta. In large bowl, combine all ingredients. Mix well. Refrigerate, preferably overnight.
Garnish with fresh basil or parsley. Serves 10-12.
