Curried Crockpot Pork with "Steve's Gourmet Olives"

Delicious, savory pulled pork dish, great for sandwiches or plating with sides. I typically use a jar of Greek “Steve’s Gourmet Olives” for this dish since they do not have pits. I also decide on either mild or spicy, according to my mood and the crowd I'm cooking for. Put this dish on a party buffet along with some large dinner rolls for awesome pulled pork sandwiches. Tastes even better on day 2 or 3.


12 oz jar Steve's Gourmet Olives - juice and all

3-4 lb pork loin - with fat trimmed off 
12 oz mushrooms - sliced

1/4 tsp salt 
1/4 tsp black pepper corns- whole 
4 tsp Italian seasoning 
4 tsp oregano 
4 tsp basil
1 tsp anise seed 
1 tsp curry powder 

1/2 cup garlic - sliced
1 large onion - sliced
2 cups tri-color peppers - sliced
1 habanero pepper- chopped (optional)

28 oz can crushed tomatoes
14 oz can diced tomatoes


In 6 quart crock pot, add all ingredients in order except the pork loin. Make sure to use the entire jar of Steve's Gourmet Olives, juice and all. The wine and olive oil in the jar marries with the tomatoes to make a savory sauce. Stir well. Add pork loin last and ladle sauce over top of pork loin to coat. Cook on high for 4 - 6 hours, or on low for 8 - 10 hours. Makes 8 to 10 servings. 

Even better on Day 2 or 3.

Serving Suggestions:

Serve as pulled pork sandwiches with rolls and slaw. Or serve as main dish with rice and beans.

Sprinkle cheese on top and add bread on side to soak up the savory sauce. Can substitute chicken or beef for the pork, and add some hearty vegetables like carrots and potatoes.
